Fly from the UK to Managua, for an overnight stay in Nicaragua’s modern capital.  Transfer by road northwards to Leon and take a tour of the country’s historic ‘other capital’.  Head into the misty cloud forest and spend a night at Finca La Cumplida, a traditional working coffee finca.  Take a guided walking and 4x4 tour of the farm and plantation, plus experience a little of rural Nicaragua.  Find out just what goes into making that perfect fresh cup of coffee during a stay at Selva Negra, a low-key resort and coffee farm tucked into the cool green Nicaraguan hillside just outside the small town of Matagalpa.  Selva Negra is one of Nicaragua’s premier shade-grown coffee estates.  The coffee crop is 100 percent shade-grown Arabica beans, giving the coffee a much richer taste than non-shade grown varieties.  Later, explore the colourful and trendy colonial town of Granada, soaking up the atmosphere.  The town’s cobbled streets lead down to Lago de Nicaragua, Central America’s largest lake.  Here, journey by boat to the world’s largest freshwater island, Isla Ometepe, and hike through rainforest to the top of Maderas, one of the island’s two volcanic peaks.  Complete the holiday at a fantastic Pacific beachfront luxury Eco-lodge at Morgan’s Rock.  The lodge is situated in an 800-hectare private nature reserve hosting a variety of forest animals such as Howler Monkey, Sloth, White tipped Deer and many birds native to the subtropical region.
